Ingredients
- 1 lb. yellow squash
- 1/2 c. onion, chopped
- 1/2 c. shredded cheese
- 1 egg, beaten
- 1/2 c. green pepper, chopped
- 2 Tbsp. chopped pimento
- 1/2 c. mayonnaise
- 1/2 c. chopped nuts
- 3 Tbsp. cracker crumbs
Method
- Combine all ingredients except the cracker crumbs.
- Place in a buttered 1 1/2 to 2-quart casserole.
- Top with cracker crumbs. Bake at 325° for 30 minutes until firm.
