Ingredients

  • 2 lb. squash (yellow or crook neck)
  • 1 carrot, grated
  • 1 onion, chopped fine (small)
  • 1 small jar pimento
  • 1 can cream of chicken soup
  • 1/2 pt. sour cream
  • 1 pkg. (small) Pepperidge Farm dressing
  • 1 stick margarine

Method

  • Cook
  • (steam)
  • squash
  • and
  • drain.
  • Add
  • carrot, onion, pimento,
  • soup,
  • sour
  • cream,
  • salt and pepper to taste.
  • Melt margarine, add dressing and line bottom of casserole dish with half
  • of dressing. Pour squash mixture over this and top with remainder of dressing.
  • Bake at 350° for 30 minutes.
