Ingredients
- 2 lb. squash (yellow or crook neck)
- 1 carrot, grated
- 1 onion, chopped fine (small)
- 1 small jar pimento
- 1 can cream of chicken soup
- 1/2 pt. sour cream
- 1 pkg. (small) Pepperidge Farm dressing
- 1 stick margarine
Method
- Cook
- (steam)
- squash
- and
- drain.
- Add
- carrot, onion, pimento,
- soup,
- sour
- cream,
- salt and pepper to taste.
- Melt margarine, add dressing and line bottom of casserole dish with half
- of dressing. Pour squash mixture over this and top with remainder of dressing.
- Bake at 350° for 30 minutes.
