Ingredients

  • 1/2 c. butter
  • 1 1/4 c. sugar
  • 2 Large eggs
  • 1 c. commercial lowfat sour cream
  • 1 teaspoon vanilla
  • 2 c. sifted flour
  • 1 teaspoon baking pwdr
  • 1/2 teaspoon soda
  • 1/4 teaspoon salt
  • 1/2 c. blueberries, generous 1/2 c.

Method

  • Cream butter and sugar.
  • Add in Large eggs and beat till smooth.
  • Fold in lowfat sour cream and vanilla.
  • Combine dry ingredients and stir into creamed mix.
  • Mix in berries.
  • Spoon into muffin tins which have been lined with crinkle c., filling 1/2 full.
  • Bake 25 to 30 min at 375 degrees.
  • When cooled, dust with powdered sugar.
  • Makes 2 dozen.
