Ingredients
- 3 1/2 Tbsp. oleo
- 1/2 c. onions, minced
- 1 clove garlic, minced
- 1 c. rice
- 1 Tbsp. curry powder
- 1/4 tsp. ground coriander
- 1 1/2 c. chicken broth
Method
- Preheat oven to 400°.
- Melt 2 tablespoons oleo in ovenproof dish.
- Saute onion and garlic until onion is translucent.
- Add the rice and stir to coat all the grains with butter.
- Sprinkle with curry powder and coriander; stir to blend.
- Stir in broth.
- Cover with close-fitting lid and bake exactly 17 minutes.
- Add remaining oleo.
