Ingredients

  • 3 1/2 Tbsp. oleo
  • 1/2 c. onions, minced
  • 1 clove garlic, minced
  • 1 c. rice
  • 1 Tbsp. curry powder
  • 1/4 tsp. ground coriander
  • 1 1/2 c. chicken broth

Method

  • Preheat oven to 400°.
  • Melt 2 tablespoons oleo in ovenproof dish.
  • Saute onion and garlic until onion is translucent.
  • Add the rice and stir to coat all the grains with butter.
  • Sprinkle with curry powder and coriander; stir to blend.
  • Stir in broth.
  • Cover with close-fitting lid and bake exactly 17 minutes.
  • Add remaining oleo.
