Ingredients

  • 1 recipe pastry
  • 1/4 to 1/2 c. sugar
  • 1/4 c. flour or 3 Tbsp. quick cooking tapioca
  • 1/2 tsp. cinnamon
  • dash of nutmeg
  • 6 c. peeled and sliced fresh peaches
  • 1 Tbsp. lemon juice
  • butter or margarine

Method

  • Heat oven to 450°.
  • Line a 9-inch pie pan with a little more than half the pastry.
  • Combine sugar, flour, cinnamon, nutmeg and peaches.
  • Place in crust; sprinkle with lemon juice and dot with butter.
  • Roll remaining pastry out and use.
  • Can be cut into fancy shapes and placed on top of peaches.
  • Flute edges of pie.
  • Bake for 15 minutes.
  • Reduce heat to 375° and bake for 35 to 45 minutes, or until crust is golden brown and peaches are tender. Makes one 9-inch pie.
