Ingredients
- 3 c. cooked squash
- 1 c. Ritz crackers
- 1 c. Cheddar cheese (sharp or mild)
- 1 can cream of chicken soup
- 1 small onion, chopped
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 egg
Method
- Drain squash.
- Crumble crackers and grate cheese.
- Reserve 1/2 of the crackers and cheese for topping. Place squash, 1/2 of cheese, 1/2 of crackers, onion and other ingredients in a 3-quart casserole. Top with remaining cheese and crackers.
- Bake at 325° for 45 minutes.
- Serves 6.
