Ingredients

  • 3 c. cooked squash
  • 1 c. Ritz crackers
  • 1 c. Cheddar cheese (sharp or mild)
  • 1 can cream of chicken soup
  • 1 small onion, chopped
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 egg

Method

  • Drain squash.
  • Crumble crackers and grate cheese.
  • Reserve 1/2 of the crackers and cheese for topping. Place squash, 1/2 of cheese, 1/2 of crackers, onion and other ingredients in a 3-quart casserole. Top with remaining cheese and crackers.
  • Bake at 325° for 45 minutes.
  • Serves 6.
