Ingredients

  • 1 lb. squash, cut up
  • 1 small onion
  • cornbread stuffing
  • 1 Tbsp. butter
  • 2 c. grated cheese
  • salt
  • pepper
  • paprika

Method

  • Heat oven to 350°.
  • Steam cut up squash and diced onion together until tender with salt and pepper.
  • Drain.
  • In baking pan, put squash and mash.
  • Add butter and more salt and pepper, if needed, to taste.
  • Add enough stuffing to soak up liquids.
  • Add 1 cup cheese and mix with squash.
  • Put the rest of the cheese on top as a topper.
  • Sprinkle with paprika and bake at 350° until cheese is melted.
