Ingredients
- 1 lb. squash, cut up
- 1 small onion
- cornbread stuffing
- 1 Tbsp. butter
- 2 c. grated cheese
- salt
- pepper
- paprika
Method
- Heat oven to 350°.
- Steam cut up squash and diced onion together until tender with salt and pepper.
- Drain.
- In baking pan, put squash and mash.
- Add butter and more salt and pepper, if needed, to taste.
- Add enough stuffing to soak up liquids.
- Add 1 cup cheese and mix with squash.
- Put the rest of the cheese on top as a topper.
- Sprinkle with paprika and bake at 350° until cheese is melted.
