Ingredients
- 2 c. yellow squash
- 3 eggs
- 3 tsp. vanilla
- 1/2 c. pecans, chopped
- 1 c. oil
- 3 c. flour (plain)
- 1 tsp. salt
- 1 tsp. soda
- 1/4 tsp. allspice
- 1/4 tsp. baking powder
- 2 tsp. cinnamon
Method
- Peel and grate squash.
- Sift together flour, salt, soda, allspice, baking powder and cinnamon; set aside.
- In large mixing bowl, beat eggs.
- Add oil, squash, sugar and vanilla.
- Mix well, then add flour mixture and blend well.
- Stir in nuts.
- Bake in greased and floured pans.
- Bake at 350° for approximately 1 hour. Can top with hard lemon sauce or cream cheese frosting.
