Ingredients

  • 2 c. yellow squash
  • 3 eggs
  • 3 tsp. vanilla
  • 1/2 c. pecans, chopped
  • 1 c. oil
  • 3 c. flour (plain)
  • 1 tsp. salt
  • 1 tsp. soda
  • 1/4 tsp. allspice
  • 1/4 tsp. baking powder
  • 2 tsp. cinnamon

Method

  • Peel and grate squash.
  • Sift together flour, salt, soda, allspice, baking powder and cinnamon; set aside.
  • In large mixing bowl, beat eggs.
  • Add oil, squash, sugar and vanilla.
  • Mix well, then add flour mixture and blend well.
  • Stir in nuts.
  • Bake in greased and floured pans.
  • Bake at 350° for approximately 1 hour. Can top with hard lemon sauce or cream cheese frosting.
