Ingredients
- 1 1/2 cups white or yellow cornmeal
- 3/4 cup self-rising flour
- 2 teaspoons baking powder
- 1 1/2 teaspoons salt
- 1 1/2 cups buttermilk
- 1 large egg
- Vegetable oil
Method
- Beat first 6 ingredients at medium speed with an electric mixer until smooth.
- Pour oil to a depth of 3 inches into a Dutch oven; heat to 375°. Drop batter by tablespoonfuls into oil, and fry, in batches, 3 minutes on each side or until golden. Drain on paper towels; serve immediately.
