- 12 tablespoon olive oil
- 12 cup chopped onion
- 12 cup grated carrot
- 2 garlic cloves
- 1 cup split peas
- 32 ounces vegetable stock
- 1 bay leaf
- 2 cups water (or more as needed)
- 2 tablespoons low-fat sour cream
- 4 ounces cooked ham, chopped
- salt
- pepper
Method
- Sautee onion, garlic, and carrot in oil.
- Add stock and 2 cups water.
- Add split peas and bayleaf.
- Bring to a low boil.
- Reduce heat to medium-low.
- Let simmer for one hour or until peas are soft.
- Use a rotary blender (boat motor), blender, or food processor until smooth (add water to thin if too thick).
- Stir in ham, sourcream, and season to taste.
