Ingredients

  • 2 or 3 lb. ham end
  • 2 carrots
  • 1 onion (large)
  • 2 potatoes
  • 3 qt. boiling water
  • 1 c. split peas
  • salt and pepper
  • 2 Tbsp. catsup

Method

  • Put the end of a moderately lean smoked ham in a kettle with carrot and peeled onion, whole potatoes and boiling water.
  • Boil 1 hour and strain.
  • Now rinse the ham thoroughly in hot water and return to strained stock, together with split peas, which have been soaked overnight and boil for 1 hour.
  • Season with salt and white pepper and add catsup.
  • Serve at once.
  • Thin with boiling water if too thick.
