Ingredients
- 2 or 3 lb. ham end
- 2 carrots
- 1 onion (large)
- 2 potatoes
- 3 qt. boiling water
- 1 c. split peas
- salt and pepper
- 2 Tbsp. catsup
Method
- Put the end of a moderately lean smoked ham in a kettle with carrot and peeled onion, whole potatoes and boiling water.
- Boil 1 hour and strain.
- Now rinse the ham thoroughly in hot water and return to strained stock, together with split peas, which have been soaked overnight and boil for 1 hour.
- Season with salt and white pepper and add catsup.
- Serve at once.
- Thin with boiling water if too thick.
