Ingredients
- 2 to 3 bunches fresh cut spinach, cleaned and torn
- 1 chopped red onion
- 1 pkg. frozen peas
- 1 pkg. fresh mushrooms, sliced
- 1 large pkg. shredded Monterey Jack cheese
- real bacon bits (I use Hormel)
- mayonnaise (not light or fat-free)
Method
- Use a large refrigerator container with lid.
- Layer spinach, onion, peas, cheese, mushrooms and bacon. Cover with a generous amount of mayonnaise and refrigerate overnight or several hours. Just before serving, toss well.
