Ingredients

  • 1 lb. fresh spinach, washed, dried and chilled
  • 4 slices raw bacon, diced
  • 2 tsp. brown sugar
  • 1/4 c. sliced green onions
  • 1/4 tsp. salt
  • 1 1/2 Tbsp. vinegar
  • 1/8 tsp. dry mustard
  • dash of paprika

Method

  • With scissors, snip spinach coarsely into a salad bowl.
  • Cook diced bacon in a skillet over moderately high heat (about 325°) until crisp.
  • Reduce heat to moderate (about 250°).
  • Add sugar, green onions, salt, vinegar, mustard and paprika.
  • Bring to the boiling point and remove from heat.
  • Just before serving, pour the hot dressing over the spinach and toss lightly until leaves are coated.
  • Serves 4.
