Ingredients
- 2 pkg. frozen chopped spinach
- 1 tsp. minced onion
- 1 1/2 c. dry Pepperidge Farm seasoned stuffing mix
- 6 eggs
- 3/4 c. margarine, melted
- 3 to 4 tomatoes, sliced thickly
- salt and pepper
Method
- Cook spinach and drain well.
- Mix all other ingredients, except tomatoes.
- Add spinach and mix well.
- Grease 2-quart casserole and make 2 layers of tomatoes on bottom.
- Pour spinach on top.
- Bake, uncovered, at 350° for about 1/2 hour.
- (May be assembled the day before and baked on the day needed.)
