Ingredients

  • 2 pkg. frozen chopped spinach
  • 1 tsp. minced onion
  • 1 1/2 c. dry Pepperidge Farm seasoned stuffing mix
  • 6 eggs
  • 3/4 c. margarine, melted
  • 3 to 4 tomatoes, sliced thickly
  • salt and pepper

Method

  • Cook spinach and drain well.
  • Mix all other ingredients, except tomatoes.
  • Add spinach and mix well.
  • Grease 2-quart casserole and make 2 layers of tomatoes on bottom.
  • Pour spinach on top.
  • Bake, uncovered, at 350° for about 1/2 hour.
  • (May be assembled the day before and baked on the day needed.)
