Ingredients
- 1 T. oil
- 1 t. ground cumin
- 1 t. ginger
- 1 t. green chile
- 1/4 c. unsweetened coconut
- 1 large bunch of spinach (or bag of baby spinach)
- 1/2 c. plain yogurt
Method
- 1. Heat oil in pan
- 2. Add cumin, ginger, chile and coconut. Saute until aromatic.
- 3. Add spinach and cook until wilted. Stir in yogurt.
- 4. Take pan off heat and blend mixture until smooth (either in a blender or with an immersion blender).
