Ingredients
- 1 (10 oz.) pkg. frozen chopped spinach
- 1 (9-inch) pastry shell
- 1/2 c. chopped onion
- 1 (15 oz.) container cottage cheese
- 2 eggs
- 3/4 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. nutmeg
- 1/4 c. Parmesan cheese
Method
- Bake pastry shell for 15 minutes, until lightly browned.
- Cook spinach as per package directions.
- Squeeze to remove as much moisture as possible.
- Add onion and toss over moderate heat until all liquid has evaporated.
- Remove from heat.
