Ingredients
- 2 (10 oz.) pkg. frozen spinach
- 1/4 c. sour cream
- 1/2 c. seasoned bread crumbs
- 2 Tbsp. melted butter
- 1/4 c. Parmesan cheese
- 6 slices bacon, crumbled, or bacon bits
Method
- Cook and cool spinach.
- Stir in sour cream and crumbs.
- Put 2 tablespoons of spinach mixture in each crepe.
- Roll and place in a buttered 9 x 13-inch baking dish.
- Brush crepes with melted butter, sprinkle with cheese and bacon (you may use almonds instead).
- Bake at 375° for 15 minutes.
- Can be made ahead and refrigerated and bake for 25 minutes.
- Makes 10 to 15 crepes.
