Ingredients

  • 2 (10 oz.) pkg. frozen spinach
  • 1/4 c. sour cream
  • 1/2 c. seasoned bread crumbs
  • 2 Tbsp. melted butter
  • 1/4 c. Parmesan cheese
  • 6 slices bacon, crumbled, or bacon bits

Method

  • Cook and cool spinach.
  • Stir in sour cream and crumbs.
  • Put 2 tablespoons of spinach mixture in each crepe.
  • Roll and place in a buttered 9 x 13-inch baking dish.
  • Brush crepes with melted butter, sprinkle with cheese and bacon (you may use almonds instead).
  • Bake at 375° for 15 minutes.
  • Can be made ahead and refrigerated and bake for 25 minutes.
  • Makes 10 to 15 crepes.
