Ingredients

  • 1 bunch Fresh Spinach
  • 1/2 whole Chopped Gala Apple
  • 18 cups Chopped Red Onion
  • 1/4 cups Chopped Goat Cheese
  • 1/2 whole Chopped Avocado
  • 1/2 whole Tomato
  • 18 cups Dried Cranberries
  • 18 cups Sliced Almonds
  • 3 Tablespoons Extra Virgin Olive Oil
  • 1 Tablespoon Red Wine Vinegar
  • 1 teaspoon Dijon Mustard (optional)
  • 1 dash Salt
  • 1 dash Pepper
  • 2 whole Whole Wheat Pitas, Warmed

Method

  • Chop spinach, apple, red onion, goat cheese, avocado and tomato, and place in a large mixing bowl.
  • Add dried cranberries and almonds.
  • Toss to mix.
  • Mix olive oil, red wine vinegar and dijon mustard (mustard is optional) in a small jar.
  • Add a dash of salt and pepper, and shake together.
  • Adjust olive oil and vinegar to your taste.
  • Pour desired amount of dressing over the mixed salad.
  • Any leftover dressing can be stored in the refrigerator for a few days.
  • Toss to coat.
  • Warm pitas.
  • Cut in half, and stuff with salad mixture.
