Ingredients

  • 1 (10 oz.) pkg. frozen chopped spinach
  • 1 medium onion, chopped
  • 2 tsp. reduced-calorie margarine, melted
  • 1 c. 1% low-fat cottage cheese
  • 1/4 c. (1 oz.) shredded low-fat process American cheese, divided
  • 1/8 tsp. ground nutmeg
  • dash of pepper
  • vegetable cooking spray

Method

  • Cook spinach according to package directions, omitting salt; drain well.
  • Saut onion in margarine in a medium nonstick skillet until tender.
  • Add spinach, cottage cheese, 2 tablespoons shredded cheese, nutmeg and pepper; stir well.
  • Spoon into a 1-quart casserole coated with cooking spray.
  • Sprinkle with remaining 2 tablespoons shredded cheese.
  • Bake at 350° for 25 to 30 minutes or until set.
