Ingredients
- 1 (10 oz.) pkg. frozen chopped spinach
- 1 medium onion, chopped
- 2 tsp. reduced-calorie margarine, melted
- 1 c. 1% low-fat cottage cheese
- 1/4 c. (1 oz.) shredded low-fat process American cheese, divided
- 1/8 tsp. ground nutmeg
- dash of pepper
- vegetable cooking spray
Method
- Cook spinach according to package directions, omitting salt; drain well.
- Saut onion in margarine in a medium nonstick skillet until tender.
- Add spinach, cottage cheese, 2 tablespoons shredded cheese, nutmeg and pepper; stir well.
- Spoon into a 1-quart casserole coated with cooking spray.
- Sprinkle with remaining 2 tablespoons shredded cheese.
- Bake at 350° for 25 to 30 minutes or until set.
