Ingredients

  • 1 lb. fresh spinach, torn
  • 1 medium red onion, cut into rings
  • 4 stalks celery, chopped
  • 8 mushrooms, sliced
  • 4 green onions, chopped
  • 1/2 c. raisins
  • 4 tsp. chopped parsley
  • 1/2 c. chopped walnuts
  • 4 slices crisp bacon, crumbled
  • 1/2 c. reduced calorie Italian dressing
  • 1/2 c. orange juice
  • 4 hard-boiled eggs (square)
  • 1/2 c. garlic flavored croutons

Method

  • Combine the first 9 ingredients in bowl; mix well.
  • Mix salad dressing and orange juice in small bowl.
  • Pour over salad; toss lightly.
  • Top with egg quarters and croutons.
