Ingredients

  • 2 cans spinach
  • 1 can cream of mushroom soup
  • 4 hard-boiled eggs
  • 8 slices American processed cheese
  • 1 1/2 c. cracker crumbs
  • 1/2 stick margarine, melted
  • cooking spray
  • 6 slices bacon, cooked and drained on paper towel

Method

  • Spray casserole dish with cooking spray; drain water off spinach.
  • Add to casserole dish.
  • Add soup; mix well.
  • Slice eggs; layer on top.
  • Add cheese layer on top of eggs.
  • Crumble bacon and layer on top of eggs.
  • Mix crumbs and margarine together; cook for about 30 minutes at 350°.
