Ingredients
- 6 eggs, slightly beaten
- 6 Tbsp. flour
- 1 1/2 sticks butter, melted
- 1 tsp. salt
- 2 to 4 Tbsp. onion, chopped
- 1 large (8 oz.) cottage cheese (small curd)
- 2 pkg. frozen spinach, chopped
- 1/2 lb. Velveeta or Cheddar cheese, cubed small
Method
- Mix together egg, flour, butter, salt and onion.
- Add cottage cheese and spinach.
- Add Velveeta cubes.
- Spread into a 9 x 13-inch casserole pan.
- Bake at 375° for 45 minutes.
- Casserole may be frozen and thawed before baking.
