Ingredients

  • 2 (10 ounce) packages frozen spinach, thawed, squeezed dry
  • 2 cups herb stuffing mix
  • 1 cup firmly packed parmesan cheese
  • 12 cup butter, melted
  • 4 small green onions, chopped
  • 3 eggs
  • 1 dash nutmeg
  • 14 cup mayonnaise
  • 3 tablespoons Dijon mustard

Method

  • Combine all ingredients in a large bowl and mix well.
  • Shape into 1-inch balls, cover, refrigerate or freeze until ready to bake.
  • Preheat oven to 350.
  • Set balls on ungreased baking sheet and bake until golden brown, about 10 to 15 minutes.
  • Serve with mustard sauce.
  • MUSTARD SAUCE: Mix together; adjust mustard to taste.
