Ingredients
- 2 (10 ounce) packages frozen spinach, thawed, squeezed dry
- 2 cups herb stuffing mix
- 1 cup firmly packed parmesan cheese
- 12 cup butter, melted
- 4 small green onions, chopped
- 3 eggs
- 1 dash nutmeg
- 14 cup mayonnaise
- 3 tablespoons Dijon mustard
Method
- Combine all ingredients in a large bowl and mix well.
- Shape into 1-inch balls, cover, refrigerate or freeze until ready to bake.
- Preheat oven to 350.
- Set balls on ungreased baking sheet and bake until golden brown, about 10 to 15 minutes.
- Serve with mustard sauce.
- MUSTARD SAUCE: Mix together; adjust mustard to taste.
