Ingredients

  • 1 onion, peeled and chopped
  • 2 garlic cloves, minced
  • 14 ounces spinach, chopped
  • cooking spray
  • 12 teaspoon ground nutmeg (optional)
  • 12 ounces ricotta cheese
  • 12 cup chicken broth
  • 1 pinch salt & freshly ground black pepper

Method

  • Spary a large non stick saucepan with cooking spray and add the onion, garlic and spinach.
  • Stir fry for 8-10 minutes.
  • Add the nutmeg (if using) ricotta and broth.
  • Cook for a further 4-5 minutes, stirring often.
  • Remove from the heat and season well.
  • Serve mixed with cooked pasta of your choice.
