Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 9 oz frozen spinach, thawed, drained
  • 7 oz feta cheese, crumbled
  • 1 (15 oz) jar baby beets, drained, thinly sliced

Method

  • Preheat oven to 425°F. Lay puff pastry out on an oiled baking tray. Fold edges over to make a 1/4 inch border around edges. Prick base all over with a fork. Place another baking tray on top of puff pastry and bake for 10 mins.
  • Remove top tray from puff pastry. Reduce oven to 400°F.
  • Meanwhile, combine spinach with 1/2 the cheese. Spoon over puff pastry base. Top with beets and remaining cheese. Bake for 10 mins, or until golden brown.
