Ingredients
- 1/2 cup plain flour
- 1/2 tsp paprika
- salt and pepper
- 8 chicken thigh fillets (halved)
- 2 tbsp vegetable oil
- 2 lemons
- 1 clove garlic (crushed)
- 1/3 cup vegetable oil
- 3 tbsp soy sauce
Method
Preheat oven to 200C.
Place flour, paprika, salt and pepper in a large plastic bag. Add chicken and shake to coat. Remove chicken and shake off excess flour.
Heat 2 tbsp vegetable oil in a large pan over medium heat and brown chicken pieces. Place chicken in an ovenproof dish.
In a small bowl, combine finely grated rind and juice of the lemons, garlic and vegetable oil and soy sauce. Pour mixture over chicken, cover and bake for 15 minutes.
Turn chicken and bake for 10 minutes or until browned and cooked. Serve chicken with juices, jasmine rice and baby salad leaves.
