Ingredients

  • 4 cups shredded cooked turkey breast
  • 1/2 cup red, green or yellow sweet peppers, diced
  • 1/2 cup drained chopped canned tomatoes
  • 1/4 to 1/2 cup hot sauce
  • 1/4 cup honey
  • 1 tablespoon crushed red-pepper relish
  • 1/2 cup fresh chopped cilantro
  • 8 8-inch whole-wheat tortillas

Method

  • Place the turkey in a cast-iron skillet over medium-low heat.
  • Add the fresh peppers, and saute, stirring constantly for 10 minutes.
  • Add the tomatoes, hot sauce, honey, relish and cilantro, and cook an additional 10 to 20 minutes.
  • Serve wrapped in tortillas.
