Ingredients

  • 2 Tbs. olive oil
  • 2 medium onions, finely diced (3 cups)
  • 1 Tbs. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. curry powder
  • 1/4 tsp. cayenne pepper
  • 1 Tbs. tomato paste

Method

  • Heat oil in large skillet over medium-high heat.
  • Add onions, and sprinkle with salt.
  • Cook 7 to 9 minutes, or until onions are browned, stirring occasionally.
  • Stir in chili powder, cumin, curry powder, and cayenne; saute 2 minutes, or until spices are fragrant.
  • Add tomato paste and 1/2 cup water.
  • Cook 5 to 6 minutes, or until most of water has evaporated, and onion mixture is thick enough to coat a spoon.
  • Season with salt and pepper, if desired.
  • Cool to room temperature before serving.
