Ingredients

  • 1 c. shortening
  • 1 c. sugar
  • 1 c. canned pumpkin
  • 1 egg
  • 2 c. all-purpose flour
  • 1 Tbsp. pumpkin pie spice
  • 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • Cookie Glaze (recipe follows)
  • chopped nuts (optional)

Method

  • In an extra large mixing bowl, beat together the shortening and sugar with an electric mixer until fluffy.
  • Add pumpkin and egg; beat until combined.
  • In another bowl, combine flour, pumpkin pie spice, baking powder and baking soda; beat into the pumpkin mixture until combined.
  • Spoon by rounded teaspoonfuls onto ungreased baking sheets.
  • Bake in a 375° oven for 8 to 10 minutes, or until the tops seem firm.
  • Remove; cool on wire racks.
  • Prepare Cookie Glaze; spread over the cookies.
  • Sprinkle with the chopped nuts, if you like.
  • Makes 42 to 48 cookies.
