Ingredients

  • 1 qt. shelled and cleaned shrimp
  • 2 Tbsp. vinegar
  • 1 1/2 tsp. lemon juice
  • 1/4 tsp. salt
  • 1/8 tsp. dry mustard
  • pepper
  • 1 small onion, thinly sliced
  • 1 clove garlic, halved
  • 3 Tbsp. cooking oil
  • 1 pickled jalapeno, rinsed, seeded and cut in strips or 1/2 c. chopped jalapenos

Method

  • Thaw frozen shrimp.
  • In bowl, combine vinegar, lemon juice, salt, mustard and pepper; set aside.
  • In medium skillet, cook shrimp, half of the onion slices and the garlic in hot oil over medium-high heat 4 to 5 minutes or just until shrimp are done, stirring occasionally.
  • Remove onion and garlic with slotted spoon; discard.
  • Add shrimp and remaining oil to vinegar mixture in bowl along with remaining onion and jalapeno.
  • Cover and chill several hours or overnight, stirring occasionally.
