Ingredients
- 1 qt. shelled and cleaned shrimp
- 2 Tbsp. vinegar
- 1 1/2 tsp. lemon juice
- 1/4 tsp. salt
- 1/8 tsp. dry mustard
- pepper
- 1 small onion, thinly sliced
- 1 clove garlic, halved
- 3 Tbsp. cooking oil
- 1 pickled jalapeno, rinsed, seeded and cut in strips or 1/2 c. chopped jalapenos
Method
- Thaw frozen shrimp.
- In bowl, combine vinegar, lemon juice, salt, mustard and pepper; set aside.
- In medium skillet, cook shrimp, half of the onion slices and the garlic in hot oil over medium-high heat 4 to 5 minutes or just until shrimp are done, stirring occasionally.
- Remove onion and garlic with slotted spoon; discard.
- Add shrimp and remaining oil to vinegar mixture in bowl along with remaining onion and jalapeno.
- Cover and chill several hours or overnight, stirring occasionally.
