Ingredients

  • 1/2 medium-size cantaloupe (about 3/4 lb.)
  • 1 medium-size cucumber, peeled and sliced 1/4 inch thick
  • 1/2 pt. strawberries, hulled and sliced 1/4 inch thick
  • 2 Tbsp. lime juice
  • 1 Tbsp. vegetable oil
  • 2 tsp. minced hot chili peppers or 1/4 tsp. red pepper flakes
  • 2 Tbsp. chopped fresh coriander or 2 Tbsp. minced parsley and 1/2 tsp. coriander

Method

  • With a melon baller, make 1 cup cantaloupe balls.
  • Place in a medium-size bowl.
  • Add the cucumber and strawberries; toss.
  • Stir in the lime juice, vegetable oil, chili peppers and coriander. Toss again.
  • Spoon the mixture onto salad plates and serve. Serves 4.
