Ingredients
- 1/2 medium-size cantaloupe (about 3/4 lb.)
- 1 medium-size cucumber, peeled and sliced 1/4 inch thick
- 1/2 pt. strawberries, hulled and sliced 1/4 inch thick
- 2 Tbsp. lime juice
- 1 Tbsp. vegetable oil
- 2 tsp. minced hot chili peppers or 1/4 tsp. red pepper flakes
- 2 Tbsp. chopped fresh coriander or 2 Tbsp. minced parsley and 1/2 tsp. coriander
Method
- With a melon baller, make 1 cup cantaloupe balls.
- Place in a medium-size bowl.
- Add the cucumber and strawberries; toss.
- Stir in the lime juice, vegetable oil, chili peppers and coriander. Toss again.
- Spoon the mixture onto salad plates and serve. Serves 4.
