- 3 lbs chicken breasts
- 1 cup vegetable oil
- 3/4 cup soy sauce
- 3/4 cup white vinegar
- 1 tablespoon sesame oil
- 2/3 cup creamy peanut butter
- 3/4 cup sugar
- 1 1/2 teaspoons cayenne pepper
- 1 bunch green onion, Minced
- 1/2 cup cilantro, Minced
- 4 cups cooked white rice
Method
- Place chicken breasts in boiling water, lower temperature and simmer for 20 minutes. When finished cooking, cut breasts into 1/2 inch cubes.
- Combine all other ingredients except rice in medium saucepan. bring to a boil over medium heat stirring regularly. Once boiling, remove from heat.
- To Serve, place cubed chicken on rice then pour sauce over the top.
