Ingredients

  • 1/2 packages (14 Oz. Size) Pad Thai Rice Noodles
  • 4 pieces Chicken Tenderloins
  • 3 dashes Salt
  • 3 dashes Pepper
  • 3 dashes Seasoning Salt
  • 1/2 cups Peanut Oil
  • 1/4 cups Vegetable Oil
  • 2 Tablespoons Crushed Red Pepper
  • 6 Tablespoons Honey
  • 6 Tablespoons Soy Sauce
  • 1/4 cups Chopped Green Onions
  • 1/4 cups Chopped Cilantro
  • 1/4 cups Chopped Peanuts
  • 1/4 cups Shredded Carrots
  • 2 Tablespoons Lime Juice

Method

  • 1.
  • Soak noodles according to package directions, or for at least 30 minutes in cold water.
  • Drain noodles and water.
  • 2.
  • Cook noodles according to package instructions, or fill pot halfway and boil water.
  • Put noodles in boiling water and cook for 5 minutes.
  • Drain and set aside.
  • 3.
  • While noodles are cooking, dice chicken and season with a few dashes of salt, pepper, and seasoning salt.

  • Spray pan with cooking spray and saute chicken on medium-high heat until cooked thoroughly, around 5-7 minutes.
  • Cover to keep warm.
  • 5.
  • Heat both oils and red crushed pepper over medium heat in small sauce pan for 2 minutes.
  • 6.
  • Strain out pepper and reserve oil in a bowl.
  • 7.
  • Whisk in honey and soy sauce to oil.
  • 8.
  • In a large pot, combine noodles, chicken, and sauce until thoroughly and evenly coated.
  • 9.
  • Top each plate with green onions, cilantro, peanuts, carrots, and lime juice.
  • Enjoy!
  • Notes: 2 tablespoons of red crushed pepper is pretty spicy.
  • We like spicy food so this was perfect for us.
  • I would say its about a 6-7 out of 10 on the spicy scale.
  • If you are not a fan of spicy food, then definitely use only 1 tablespoon or less of red crushed pepper.
