- 1 tablespoon peanut oil
- 2 cloves garlic crushed
- 3 pieces ginger grated
- 1 pound ground chicken
- 1/3 cup tomato sauce
- 1/3 cup oyster sauce
- 1/2 cup bamboo shoots chopped
- 1/2 cup water chestnuts chopped, drained
- 1/2 cup cilantro roughly chopped, plus extra to serve
- 1 red chili pepper long, deseeded and finely sliced, to serve
- lime wedges to serve, optional
Method
- Heat peanut oil in wok or large frying pan, on high. Stir-fry garlic and ginger for 1 min, or until fragrant. Add chicken and stir-fry 3-5 mins, until browned, breaking up lumps with a wooden spoon. Stir in sauces, bamboo shoots and water chestnuts, then remove from heat. Stir in chopped cilantro, then spoon mixture onto lettuce leaves. Arrange on a plate and top with chili pepper and extra cilantro, to serve. Accompany with lime wedges, if using.
