Ingredients

  • 1/2 c. shortening
  • 1 1/2 c. brown sugar
  • 3/4 c. applesauce
  • 1 egg
  • 1 tsp. vanilla
  • 2 c. all purpose flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 1/2 tsp. pumpkin pie spice
  • 1 tsp. salt
  • 3/4 c. chopped nuts

Method

  • Preheat oven to 375°.
  • Grease cookie sheet.
  • In large bowl, beat shortening and sugar until fluffy.
  • Beat in egg, vanilla and applesauce.
  • Combine flour, baking powder, soda, salt and spices. Stir into sugar mixture.
  • Stir in nuts.
  • Drop by teaspoonfuls onto cookie sheet.
  • Bake 12 minutes.
  • Cool on rack.
  • Makes 4 dozen.
