Ingredients
- 5 lb. medium carrots
- 3 c. sugar
- 3 1/2 c. 5% acid strength vinegar
- 3 c. water
- 4 Tbsp. mustard seed
- 4 Tbsp. pickling salt
- 2 (3-inch) cinnamon sticks
- 12 whole cloves
- 12 whole allspice
Method
- Pare carrots.
- Cut into 4-inch strips.
- Place in large saucepan with enough salted water to cover.
- Cook 7 minutes or until tender.
- Drain.
