Ingredients

  • 2 pkg. (9 oz.) frozen French-style green beans or 1 lb. fresh beans
  • 4 oz. sharp Cheddar cheese, grated (about 1 c.)
  • 2 Tbsp. butter
  • 1/4 c. minced onions
  • 2 Tbsp. flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. dry mustard
  • 3/4 tsp. Worcestershire sauce
  • 1 c. thick sour cream

Method

  • Cook beans in bacon drippings.
  • Meanwhile, melt butter in saucepan.
  • Add onions.
  • Cook until onions are transparent.
  • Remove from heat.
  • Mix flour, salt, pepper, mustard and Worcestershire sauce.
  • Blend into cheese mixture.
  • Heat until mixture bubbles. Remove from heat and gradually stir in sour cream.
  • Cook over low heat, stirring constantly, just until mixture thickens.
  • Cook an additional 2 or 3 minutes longer, stirring constantly.
  • Do not boil.
  • When beans are tender, draining if necessary, add to sauce. Toss beans gently until well coated with sauce.
