Ingredients

  • 1/4 c. butter
  • 1 medium onion
  • 1/2 medium green pepper, chopped
  • 1 c. long grain rice (uncooked)
  • 2 c. stewed tomatoes (undrained)
  • 1 c. water
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 lb. ground beef

Method

  • Heat butter in a saucepan.
  • Add onion, green pepper and rice. Cook and stir over medium heat until lightly browned.
  • Add tomatoes, water, salt and pepper.
  • Mix well, bring to boil and cover tightly.
  • Reduce heat and simmer for 30 minutes.
  • Fry ground beef and add to rice mixture after 30 minutes.
  • Mix well.
  • Serves 2 to 3 people.
