Ingredients
- 1/4 c. butter
- 1 medium onion
- 1/2 medium green pepper, chopped
- 1 c. long grain rice (uncooked)
- 2 c. stewed tomatoes (undrained)
- 1 c. water
- 1 tsp. salt
- 1/8 tsp. pepper
- 1/2 lb. ground beef
Method
- Heat butter in a saucepan.
- Add onion, green pepper and rice. Cook and stir over medium heat until lightly browned.
- Add tomatoes, water, salt and pepper.
- Mix well, bring to boil and cover tightly.
- Reduce heat and simmer for 30 minutes.
- Fry ground beef and add to rice mixture after 30 minutes.
- Mix well.
- Serves 2 to 3 people.
