Ingredients
- 2 cups instant rice
- 1 can tomato sauce
- 1 can sliced mushrooms sliced
- 1/2 cup onion chopped
- 1/2 bell pepper chopped
- 3 eggs separated
- swiss cheese Sliced
- sliced green olives
Method
- Cook rice according to package directions, drain, add tomato sauce and simmer.
- Saute' onions, bell pepper and mushrooms.
- Add to rice mixture.
- Beat egg whites and then egg yolks and all beaten yolks to beaten whites.
- Pour eggs into fry pan and cook omlette until almost done.
- Spread on rice mixture.
- Top with Swiss cheese and chopped green olives.
- Slice and serve with chips.
