Ingredients

  • 2 cups instant rice
  • 1 can tomato sauce
  • 1 can sliced mushrooms sliced
  • 1/2 cup onion chopped
  • 1/2 bell pepper chopped
  • 3 eggs separated
  • swiss cheese Sliced
  • sliced green olives

Method

  • Cook rice according to package directions, drain, add tomato sauce and simmer.
  • Saute' onions, bell pepper and mushrooms.
  • Add to rice mixture.
  • Beat egg whites and then egg yolks and all beaten yolks to beaten whites.
  • Pour eggs into fry pan and cook omlette until almost done.
  • Spread on rice mixture.
  • Top with Swiss cheese and chopped green olives.
  • Slice and serve with chips.
