Ingredients
- Olive oil
- 1 1/2 lb tomatoes, peeled and sliced
- 1/2 c chopped onion
- 1/3 c chicken broth
- 1/2 tsp dried basil leaves
- 1/2 tsp salt
- 1/4 tsp black pepper
- 12 oz thin spaghetti (uncooked)
- Grated Parmesan cheese
Method
- In a large skillet, cook onions in olive oil until onions are lightly browned.
- Stir in tomatoes, broth and seasonings.
- Cover. Simmer 20 minutes, stirring occasionally.
- Cook spaghetti according to package directions.
- Drain.
- Serve with tomato sauce and cheese.
- Serves 6.
