Ingredients

  • 2 Tbsp unsalted butter
  • 2 Tbsp onion, finely diced
  • 1 tsp dried oregano
  • 2 tsp dried thyme
  • 1 Cup heavy cream
  • 1 Tbsp all-purpose flour
  • 1 Tbsp sherry
  • 3/4 cup Gorgonzola cheese
  • Salt & pepper to taste

Method

  • In a small saucepan, melt butter. Add onions, oregano & thyme. Whisk in flour. Cook flour for 1 minute. Add heavy cream and sherry and continue to whisk. Bring mixture to a simmer and allow flour to cook out, about 2 minutes more. After cream simmers, add Gorgonzola to melt. Season with salt & peper.
