Ingredients

  • 4 to 5 Tbsp. olive oil
  • 1 medium onion, diced
  • 1 green pepper, julienned
  • 2 cloves garlic, minced
  • 1 eggplant, peeled and diced
  • 1 large can whole tomatoes, drained
  • 1 can flat anchovy fillets, shredded
  • 1/2 c. black olives, sliced
  • 8 oz. box fresh mushrooms, sliced
  • 1 Tbsp. capers
  • 1 tsp. basil
  • 1 Tbsp. parsley
  • red pepper flakes
  • 1 pkg. spaghetti, cooked and tossed with melted butter
  • 2 Tbsp. Parmesan cheese

Method

  • Saute medium onion in olive oil over medium heat for 10 minutes.
  • Add green pepper, eggplant, garlic and mushrooms and saute for 15 more minutes. Add tomatoes and basil.
  • Cover and simmer
