Ingredients

  • 3 c. diced cooked chicken
  • 1/4 c. butter
  • 1/2 green pepper
  • 1 medium onion
  • 1/2 lb. sliced mushrooms
  • 1 can chicken broth
  • 2 cans cream of mushroom soup
  • 1 jar red pimentos
  • 1/2 lb. grated Jack cheese
  • 1/2 lb. uncooked spaghetti

Method

  • Cook spaghetti, let cool.
  • Boil whole chicken or use pieces of chicken equal to approximately 1 whole chicken.
  • One whole chicken will give you approximately 3 cups of chicken.
  • Cool and dice. Brown onion, green pepper and mushrooms in butter.
  • Place in large mixing bowl the ingredients along with the broth, soup and red pimentos plus grated Jack cheese.
  • Put in large 9 x 16-inch pan. Bake in preheated 350° oven for 1/2 hour to 45 minutes, uncovered.
