Ingredients

  • 1 Tbsp. olive oil
  • 1 1/2 lb. chicken, cubed
  • 1/2 c. onions, chopped
  • 1 c. chicken broth
  • 1 small can chopped green chiles
  • 1 (15 oz.) can diced tomatoes
  • 2 green onions, sliced
  • 1 can (regular size) cannellini beans (undrained)
  • 1 tsp. garlic powder
  • 1/8 tsp. ground red pepper
  • 1 tsp. ground cumin
  • 1/2 tsp. oregano
  • 1/2 tsp. dried cilantro
  • Monterey Jack cheese, shredded

Method

  • Mix spices together. Heat oil in large saucepan over medium-high heat. Add chicken and onions. Cook 4 to 5 minutes. Stir in broth, green chiles and spice blend. Simmer for 10 minutes. Serve topped with sliced green onions and cheese.
