- 1 Tbsp. olive oil
- 1 1/2 lb. chicken, cubed
- 1/2 c. onions, chopped
- 1 c. chicken broth
- 1 small can chopped green chiles
- 1 (15 oz.) can diced tomatoes
- 2 green onions, sliced
- 1 can (regular size) cannellini beans (undrained)
- 1 tsp. garlic powder
- 1/8 tsp. ground red pepper
- 1 tsp. ground cumin
- 1/2 tsp. oregano
- 1/2 tsp. dried cilantro
- Monterey Jack cheese, shredded
Method
- Mix spices together. Heat oil in large saucepan over medium-high heat. Add chicken and onions. Cook 4 to 5 minutes. Stir in broth, green chiles and spice blend. Simmer for 10 minutes. Serve topped with sliced green onions and cheese.
