Ingredients
- 4 (6 ounce) baking potatoes, peeled and cut into 1 inch pieces
- 2 tablespoons low-fat milk
- 14 teaspoon salt
- 34 cup plain low-fat yogurt
- 1 tablespoon chopped chipotle chile, canned in adobo sauce
- 14 teaspoon ground cumin
- 12 teaspoon black pepper
Method
- Place potato pieces in a large microwave-safe bowl.
- Cover bowlwith plastic wrap, and cut a 1 inch slit in center of plastic wrap.
- Microwave 10 minutes on high setting.
- Let stand 2 minutes.
- Add remaing ingredients to bowl, stir, and mash with a potato smasher.
