- 2 (15 oz.) black beans
- 3/4 lb. ground turkey
- 1/2 c. chopped onion
- 1 tsp. chili powder
- 1 c. bottled salsa
- 1 c. shredded Cheddar
- 8 oz. sour cream
- 3 Tbsp. chopped cilantro or parsley
- 1/4 tsp. salt
- 1 avocado, chopped
- 2 to 3 plum tomatoes, chopped
- 2 to 3 green onions, chopped
- tortilla chips
Method
- Drain and rinse beans.
- Combine with the raw turkey, onion and chili powder in a shallow 2-quart microwave dish, preferably transparent.
- Cover and microwave on High 8 to 9 minutes, stirring to mash beans and break up meat every 3 minutes until turkey is white.
- Stir in salsa.
- Sprinkle with cheese and microwave on High 1 to 2 minutes or until cheese is melted.
