Ingredients

  • 2 (15 oz.) black beans
  • 3/4 lb. ground turkey
  • 1/2 c. chopped onion
  • 1 tsp. chili powder
  • 1 c. bottled salsa
  • 1 c. shredded Cheddar
  • 8 oz. sour cream
  • 3 Tbsp. chopped cilantro or parsley
  • 1/4 tsp. salt
  • 1 avocado, chopped
  • 2 to 3 plum tomatoes, chopped
  • 2 to 3 green onions, chopped
  • tortilla chips

Method

  • Drain and rinse beans.
  • Combine with the raw turkey, onion and chili powder in a shallow 2-quart microwave dish, preferably transparent.
  • Cover and microwave on High 8 to 9 minutes, stirring to mash beans and break up meat every 3 minutes until turkey is white.
  • Stir in salsa.
  • Sprinkle with cheese and microwave on High 1 to 2 minutes or until cheese is melted.
