Ingredients

  • 2 sticks of butter
  • 2 Tbs honey
  • 1 1/2 cups brown sugar
  • 1 1/2 cups flour
  • 1 1/2 cups shredded coconut
  • 4 cups rolled oatmeal
  • 1 tsp baking soda

Method

  • In the microwave, melt butter. When melted, stir in honey and set aside.
  • Thoroughly mix together brown sugar, flour and shredded coconut. Then add oatmeal.
  • Stir baking soda into butter mixture, mix well and then add to dry ingredients. Mix well until mixture crumbly.
  • Spray a baking sheet (one with sides about 16 x 11) with cooking spray. Press the mixture into the baking sheet. Bake for 20 minutes at 320 degrees.
  • Remove from oven and gently "cut" the crunchies into squares. Return the pan to oven for a further 15 minutes. Remove from oven and allow to cool completely before breaking apart crunchies.
