Ingredients

  • 2 slightly underripe mangos
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1 small scotch bonnet-type chile, seeded and coarsely chopped, to taste
  • Juice of 2 limes

Method

  • Peel the mangos, remove pit and cut fruit into small pieces.
  • Place the garlic and salt into a food processor or mortar and pestle and grind into a paste.
  • Add the chile and continue grinding.
  • Finally, add the lime juice and mix well.
  • Pour the marinade over the mango pieces and allow them to sit for at least one hour.
  • Serve with toothpicks along with drinks.
