Ingredients

  • 1 pt. sour cream
  • 1 (8 oz.) can tomatoes, drained
  • 2 pods jalapeno peppers, chopped
  • 1 lb. American cheese, shredded
  • 1 onion, chopped
  • 1 1/2 lb. ground beef
  • 8 corn tortillas

Method

  • In a skillet, cook onion in 2 tablespoons shortening until soft.
  • Remove from skillet and set aside.
  • Brown ground beef in skillet.
  • Then, mix sour cream, tomatoes, pepper, cheese and onion into the ground beef.
  • Line bottom of a large casserole dish with tortillas and top with beef mixture.
  • Let stand for 2 hours.
  • Bake at 350° for 45 minutes, stirring occasionally.
