Ingredients

  • 2 1/2 to 3 c. all-purpose flour
  • 2 Tbsp. sugar
  • 1 pkg. RapidRise yeast
  • 1/2 tsp. salt
  • 1/2 c. sour cream
  • 1/3 c. water
  • 1/4 c. butter or margarine, cut in pieces
  • 2 eggs
  • sesame or poppy seed

Method

  • In a large bowl, combine 2 cups flour, sugar, undissolved yeast and salt.
  • Heat sour cream, water and butter until very warm (120° to 130°). Stir in 1 egg and enough remaining flour to make soft dough.
  • Knead lightly to make soft dough.
  • Knead on lightly floured board until smooth and elastic, 4 to 6 minutes.
  • Divide dough into 12 equal pieces. Roll into smooth ball.
  • Place on greased baking sheet. Fill a shallow pan 1/2 full with boiling water.
  • Place baking sheet on pan to rise 20 minutes.
  • Make 6 (3/4-inch) snips around edge.
  • Beat remaining egg. Brush on rolls. Sprinkle with seed. Bake at 400° for 12 to 15 minutes.
  • Cool on rack.
  • Yields 1 dozen.
